Vegan Dinner on the fly!

Tonight I had to make a delicious vegan dinner in under an hour. I got home at 6:15pm and we had to be clear across town by 8:30pm. So I busted out my meal plan and decided to make quesadillas. I even had time to crisp them in the oven! Yum!
